Spend a Sunday afternoon in front of our fireplace learning how to create an elegant pinecone topiary. Participants will be shown all the know-hows and tips for creating a stunning topiary perfect for holiday decorating. The finished topiary may be used as a centerpiece on your table, placed on a mantel, or given as a gift. All materials are included. This workshop is limited to 10 attendees. $65 per person.
Ingredients
Filling
1 3/4 cups of your favourite berry — frozen is fine, try it with a blend of berries!
Crumble
1/2 cup plain flour
4 tbsp butter
4 tbsp demerara sugar
4 tbsp chopped hazelnuts or almonds
Syrup
1 teaspoon Serenity Lavender Farm culinary lavender buds
6 tbsp caster sugar
2 thin strips of lemon rind
6 tbsp water
Make the Syrup
Combine ingredients for syrup in a pan and stir over medium-high heat until it boils. Let boil for 5 minutes, remove from heat and cool.
Make the Crumble
In a mixing bowl, add the butter in small pieces to the flour, mixing with your fingers. Add the sugar, continue mixing until you have a crumble. Gently mix in nuts (Oats can be substituted for nuts).
Put it all together
Preheat oven to 350° F
Add your berry mix to an ovenproof dish (or divide evenly between ovenproof ramekins). Remove the lemon rind from the syrup and pour over fruit. Top with the crumble mixture and bake for 30 minutes or until crumble is brown and toasty.
Serve with cream, whipped cream, or ice cream. Sprinkle with lavender buds for a beautiful finish!

Help us celebrate Canada’s Birthday as we teach you how to make this traditional Lavender wands, also called lavender bottles,which were fashioned in Victorian times for scenting linen drawers and the tradition was brought to Canada by early settlers. The tradition is making a comeback and we will teach you how to weave these beautiful wands in a one night workshop as you learn to encase the scent of lavender in ribbon and enjoy the fragrance years to come. Taking the time to create wands allows you to get lost in the moment while enjoying the aroma as you weave the ribbon around the stalks of lavender. They also make wonderful gifts. It’s that time of year. We’re busily preparing for what we hope to be the biggest and best Lavender Festival in the Province.
If you haven’t heard we broke ground for our new hospitality facility on the Monday following last year’s festival and although the construction has been delayed we will be ready to roll out the red carpet in our new facility just in time for this year’s festival. This has been both exciting, frustrating and well a time to revisit the event design for Lavender Fest 2017. (Hence the delay in getting this post up)
Spring has sprung and we look forward to the burst of wildflowers in our secret oasis. We’ve teamed up again with our sister company North 42 Degrees Estate Winery to bring you a wildflower discovery hike in our beautiful 40 acre Carolinian forest. You’ll be lead on a guided hike, treated to wine tasting, an outdoor camp style gourmet lunch, prepared by our own Executive Chef, Steve Meehan, while you see and learn about the beautiful widfower species that inhabit our natural wonderland. The egg has ong been a symbol of rebirth and new beginnings. The decoration of eggs for Easter is believed to date back to at least the 13th century. From the simple dying of eggs to the intricate designs of Pysanky there are many ways to decorate eggs. Join us on April 13th from 6:30-9:00 to learn a decoupage Easter Egg decorating technique. A combination of imagination, paint, paper, glue and ribbon is used to make your own creation. The cost is $30.00 all supplies are included.
